These breakfast tacos are a delicious and customizable morning treat filled with scrambled eggs, crispy bacon, cheese, and fresh toppings wrapped in a warm tortilla.

  • 4 large eggs
  • 1/4 cup milk
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 4 small flour or corn tortillas
  • 4 strips bacon, cooked and crumbled
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 avocado, sliced
  • 2 tbsp chopped fresh cilantro
  • Hot sauce (optional)
  • 1 tbsp butter or oil for cooking

Instructions

  1. In a bowl, whisk together the eggs, milk, salt, and pepper.
  2. Heat butter or oil in a skillet over medium heat.
  3. Pour in the egg mixture and scramble until fully cooked. Remove from heat.
  4. Warm the tortillas in a separate skillet or microwave until soft and pliable.
  5. Assemble the tacos by dividing the scrambled eggs evenly among the tortillas.
  6. Top each with bacon, cheese, tomatoes, onion, avocado, and cilantro.
  7. Add hot sauce if desired, then serve immediately.

Notes

  • You can substitute bacon with sausage or keep it vegetarian with beans.
  • Use dairy-free cheese and omit bacon for a vegan version.
  • Serve with a side of salsa or sour cream for extra flavor.
