Blueberry Lavender Fizz

A refreshing sparkling drink that balances the sweet-tart flavor of blueberries with the floral notes of lavender, finished with a lively fizz of club soda.

  • 1 cup fresh blueberries
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 1 tablespoon dried culinary lavender
  • 1 tablespoon fresh lemon juice
  • Ice cubes, as needed
  • 1/4 cup blueberry-lavender syrup (from above), chilled
  • 1/2 cup sparkling water or club soda, chilled
  • 1 teaspoon fresh lime juice
  • Fresh blueberries & lavender sprigs, for garnish (optional)

Instructions

  1. Make the syrup: Combine blueberries, sugar, and water in a small saucepan. Bring to a gentle boil, then simmer 10 minutes, crushing berries with a spoon to release juices.
  2. Remove from heat, stir in dried lavender and lemon juice, cover, and let steep 15 minutes. Strain through a fine-mesh sieve, pressing to extract liquid. Chill until cold.
  3. Assemble each drink: Fill a tall glass with ice. Add 1/4 cup chilled blueberry-lavender syrup and the lime juice.
  4. Top with 1/2 cup sparkling water. Stir gently to combine.
  5. Garnish with fresh blueberries and a sprig of lavender if desired. Serve immediately.

Notes

  • Adjust sweetness by adding more or less syrup.
  • The syrup keeps refrigerated for up to 2 weeks.
  • Add 2 oz gin or vodka per glass for an alcoholic version.
  • Frozen blueberries work just as well as fresh.
