- 2 ripe bananas
- 1/2 cup Biscoff cookie butter
- 1 cup semi-sweet chocolate chips
- 1 tablespoon coconut oil (optional, for smoother chocolate)
- Biscoff cookie crumbs, for topping (optional)
- Popsicle sticks or skewers
- Peel the bananas and cut each one in half crosswise.
- Insert a popsicle stick or skewer into each banana half and place on a parchment-lined tray.
- Freeze the bananas for about 1 hour or until firm.
- While the bananas are freezing, melt the Biscoff cookie butter in the microwave until smooth and pourable (about 20–30 seconds).
- Dip the frozen bananas into the melted Biscoff butter to coat. Return to the tray and freeze for another 15–20 minutes.
- Melt the chocolate chips with coconut oil (if using) in the microwave in 30-second intervals, stirring in between until smooth.
- Dip the Biscoff-coated bananas into the melted chocolate, letting the excess drip off. Sprinkle with Biscoff cookie crumbs if desired.
- Place back on the tray and freeze for another 10–15 minutes or until chocolate is set.
- Serve immediately or store in a freezer-safe container.
