Biscoff Banana Pops

These Biscoff Banana Pops are a quick, fun, and indulgent frozen treat made with ripe bananas, Biscoff cookie butter, and chocolate coating—perfect for summer snacking or dessert.

  • 2 ripe bananas
  • 1/2 cup Biscoff cookie butter
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil (optional, for smoother chocolate)
  • Biscoff cookie crumbs, for topping (optional)
  • Popsicle sticks or skewers

Instructions

  1. Peel the bananas and cut each one in half crosswise.
  2. Insert a popsicle stick or skewer into each banana half and place on a parchment-lined tray.
  3. Freeze the bananas for about 1 hour or until firm.
  4. While the bananas are freezing, melt the Biscoff cookie butter in the microwave until smooth and pourable (about 20–30 seconds).
  5. Dip the frozen bananas into the melted Biscoff butter to coat. Return to the tray and freeze for another 15–20 minutes.
  6. Melt the chocolate chips with coconut oil (if using) in the microwave in 30-second intervals, stirring in between until smooth.
  7. Dip the Biscoff-coated bananas into the melted chocolate, letting the excess drip off. Sprinkle with Biscoff cookie crumbs if desired.
  8. Place back on the tray and freeze for another 10–15 minutes or until chocolate is set.
  9. Serve immediately or store in a freezer-safe container.

Notes

  • Make sure bananas are ripe but firm to avoid mushiness.
  • Use dairy-free chocolate to make this vegan.
  • Coconut oil helps create a smoother chocolate coating but is optional.
