- 1 lb ground beef
- 1 packet taco seasoning (or 2 tbsp homemade)
- 1/2 cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup frozen corn
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 2 green onions, sliced
- 1 tbsp olive oil
- Optional toppings: sour cream, avocado, cilantro, tortilla chips
- Heat olive oil in a large skillet over medium heat.
- Add ground beef and cook until browned, breaking it apart with a spoon.
- Drain excess fat if necessary.
- Add taco seasoning and water, stirring to combine. Simmer for 2-3 minutes.
- Stir in black beans, corn, and salsa. Cook for another 5 minutes until heated through.
- Sprinkle shredded cheddar cheese over the top. Cover the skillet and let the cheese melt for 2-3 minutes.
- Remove from heat and garnish with green onions and any desired toppings.
- Serve warm, optionally with tortilla chips or over rice.
Notes
- You can substitute ground turkey or chicken for a lighter option.
- Use spicy salsa or add jalapeños for extra heat.
- This dish works great as a filling for burritos or tacos too.
