Beef Taco Skillet

A one-pan beef taco skillet loaded with seasoned ground beef, beans, corn, and cheese, perfect for a quick and flavorful weeknight dinner.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1/2 cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • 2 green onions, sliced
  • 1 tbsp olive oil
  • Optional toppings: sour cream, avocado, cilantro, tortilla chips

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground beef and cook until browned, breaking it apart with a spoon.
  3. Drain excess fat if necessary.
  4. Add taco seasoning and water, stirring to combine. Simmer for 2-3 minutes.
  5. Stir in black beans, corn, and salsa. Cook for another 5 minutes until heated through.
  6. Sprinkle shredded cheddar cheese over the top. Cover the skillet and let the cheese melt for 2-3 minutes.
  7. Remove from heat and garnish with green onions and any desired toppings.
  8. Serve warm, optionally with tortilla chips or over rice.

Notes

  • You can substitute ground turkey or chicken for a lighter option.
  • Use spicy salsa or add jalapeños for extra heat.
  • This dish works great as a filling for burritos or tacos too.
