Beef Enchiladas

- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 1 (10 oz) can red enchilada sauce
- 8 small flour or corn tortillas
- 2 cups shredded cheddar or Mexican blend cheese
- 1/4 cup chopped fresh cilantro (optional)
- Sour cream, for serving (optional)
- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, add olive oil and sauté the diced onion until soft, about 3-4 minutes.
- Add garlic and cook for 1 minute more.
- Add ground beef, breaking it apart with a spoon. Cook until browned and cooked through, about 6-8 minutes.
- Drain excess fat, then stir in chili powder, cumin, paprika, salt, and pepper.
- Stir in half of the enchilada sauce and let simmer for 2-3 minutes.
- Spread a few tablespoons of enchilada sauce in the bottom of a 9×13 inch baking dish.
- Fill each tortilla with the beef mixture and a sprinkle of cheese, roll up and place seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the tortillas and top with the rest of the cheese.
- Bake uncovered for 20-25 minutes, or until cheese is melted and bubbly.
- Garnish with cilantro and serve with sour cream if desired.
Notes
- You can substitute ground turkey or chicken for a lighter version.
- Add black beans or corn to the filling for extra texture and flavor.
- Use store-bought or homemade enchilada sauce depending on preference.
