BBQ Chicken Flatbread

A quick and easy 20-minute BBQ chicken flatbread with smoky chicken, tangy sauce, red onion and gooey cheddar—perfect for busy weeknights.

  • 4 small flatbreads (naan or pita, about 6 in/15 cm each)
  • 1 boneless, skinless chicken breast (about 200 g), thinly sliced
  • 1 tablespoon olive oil
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup (120 ml) BBQ sauce
  • 1 cup (110 g) shredded cheddar cheese
  • 1/2 small red onion, thinly sliced
  • Optional garnish: chopped fresh cilantro

Instructions

  1. Pre-heat oven to 180 °C / 360 °F. Line a large baking sheet with parchment.
  2. Pat chicken dry and toss with olive oil, paprika, garlic powder, cumin, salt and pepper.
  3. Heat a non-stick skillet over medium-high heat. Sauté seasoned chicken for 4–5 minutes until lightly browned and just cooked through. Remove from heat.
  4. Arrange flatbreads on the prepared tray. Spread each with about 2 tablespoons BBQ sauce.
  5. Divide half of the cheese over the bases, then scatter cooked chicken and red onion. Top with remaining cheese.
  6. Bake for 8–10 minutes until cheese is melted and edges of flatbread are crisp.
  7. Drizzle with extra BBQ sauce and sprinkle with cilantro if desired. Slice and serve hot.

Notes

  • Shortcut: use 1 cup diced rotisserie chicken instead of cooking raw chicken.
  • Add extras like corn kernels, bell pepper strips or jalapeño for extra flavor.
  • Store leftovers in an airtight container up to 3 days; reheat in a hot oven for 5 minutes.
