BBQ Chicken Flatbread

- 4 small flatbreads (naan or pita, about 6 in/15 cm each)
- 1 boneless, skinless chicken breast (about 200 g), thinly sliced
- 1 tablespoon olive oil
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup (120 ml) BBQ sauce
- 1 cup (110 g) shredded cheddar cheese
- 1/2 small red onion, thinly sliced
- Optional garnish: chopped fresh cilantro
- Pre-heat oven to 180 °C / 360 °F. Line a large baking sheet with parchment.
- Pat chicken dry and toss with olive oil, paprika, garlic powder, cumin, salt and pepper.
- Heat a non-stick skillet over medium-high heat. Sauté seasoned chicken for 4–5 minutes until lightly browned and just cooked through. Remove from heat.
- Arrange flatbreads on the prepared tray. Spread each with about 2 tablespoons BBQ sauce.
- Divide half of the cheese over the bases, then scatter cooked chicken and red onion. Top with remaining cheese.
- Bake for 8–10 minutes until cheese is melted and edges of flatbread are crisp.
- Drizzle with extra BBQ sauce and sprinkle with cilantro if desired. Slice and serve hot.
Notes
- Shortcut: use 1 cup diced rotisserie chicken instead of cooking raw chicken.
- Add extras like corn kernels, bell pepper strips or jalapeño for extra flavor.
- Store leftovers in an airtight container up to 3 days; reheat in a hot oven for 5 minutes.
