Banana Walnut Loaf Cake

A moist and flavorful banana walnut loaf cake made with ripe bananas and crunchy walnuts, perfect for breakfast or a snack.

  • 3 ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon (optional)
  • 3/4 cup chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, mash the ripe bananas.
  3. Add melted butter and brown sugar, mixing until combined.
  4. Beat in the eggs and vanilla extract.
  5. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  6. Gradually mix the dry ingredients into the wet mixture.
  7. Fold in chopped walnuts.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 55–60 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • Use very ripe bananas for best flavor and sweetness.
  • You can toast the walnuts for extra depth of flavor.
  • Store in an airtight container for up to 4 days.
  • This loaf also freezes well for up to 2 months.
