Banana Peanut Butter Ice Cream

A simple and healthy homemade ice cream made with just bananas and peanut butter—no added sugar or dairy required!

Ingredients

  • 4 ripe bananas
  • 2 tablespoons natural peanut butter
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt (optional)

Instructions

  1. Peel the bananas and slice them into coins.
  2. Place banana slices on a parchment-lined baking sheet and freeze for at least 2 hours or until solid.
  3. Add the frozen banana slices to a food processor or high-speed blender.
  4. Blend until smooth and creamy, scraping down the sides as needed.
  5. Add the peanut butter, vanilla extract, and salt (if using), and blend again until fully combined.
  6. Serve immediately for soft-serve texture or transfer to a container and freeze for 1-2 hours for a firmer ice cream.

Notes

  • Use overripe bananas for a sweeter flavor.
  • You can add a splash of almond or oat milk if the mixture is too thick.
  • Top with chopped nuts, chocolate chips, or a drizzle of honey if desired.
