Baked Chicken Taquitos

Crispy, oven-baked chicken taquitos filled with a flavorful mixture of shredded chicken, cheese, and spices. A healthier alternative to traditional fried taquitos, perfect for snacks, appetizers, or a light meal.

  • 2 cups cooked shredded chicken
  • 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 1/4 cup cream cheese, softened
  • 1/4 cup salsa
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 10 small flour or corn tortillas
  • Cooking spray or olive oil

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a bowl, mix shredded chicken, shredded cheese, cream cheese, salsa, chili powder, garlic powder, cumin, salt, and pepper until well combined.
  3. Warm tortillas in the microwave for 20-30 seconds to make them pliable.
  4. Spoon about 2-3 tablespoons of the chicken mixture onto each tortilla and roll tightly.
  5. Place taquitos seam-side down on the baking sheet.
  6. Lightly spray or brush the tops with cooking spray or olive oil.
  7. Bake for 15-20 minutes or until golden and crispy.
  8. Serve hot with salsa, guacamole, or sour cream if desired.

Notes

  • Use rotisserie chicken for quick prep.
  • Corn tortillas make the dish gluten-free.
  • Add jalapeños or hot sauce for extra heat.
