Avocado Toast with Cherry Tomatoes

A simple, nutritious, and delicious avocado toast topped with juicy cherry tomatoes, perfect for breakfast or a light snack.

  • 2 slices of whole grain bread
  • 1 ripe avocado
  • 1/2 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
  • Optional: red pepper flakes, lemon juice, fresh basil

Instructions

  1. Toast the slices of whole grain bread to your desired crispiness.
  2. While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
  3. Mash the avocado with a fork until smooth or leave it chunky if preferred. Add a pinch of salt, pepper, and optional lemon juice to taste.
  4. Spread the mashed avocado evenly onto the toasted bread slices.
  5. Top each slice with halved cherry tomatoes.
  6. Drizzle olive oil over the top and season with more salt and pepper. Add optional red pepper flakes or fresh basil if desired.
  7. Serve immediately.
