- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream or plain yogurt
- 2 cups peeled and chopped apples (such as Granny Smith or Honeycrisp)
- 1/2 tsp ground cinnamon
- 1 tbsp lemon juice
- For Streusel Topping:
- 1/2 cup all-purpose flour
- 1/3 cup brown sugar
- 1/2 tsp ground cinnamon
- 1/4 cup unsalted butter, cold and cut into cubes
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round or square cake pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla extract.
- Mix in sour cream (or yogurt) until well combined.
- Gradually add dry ingredients to the wet mixture, mixing until just combined.
- Toss chopped apples with cinnamon and lemon juice, then fold into the batter.
- Pour batter into the prepared pan and smooth the top.
- To make streusel, mix flour, brown sugar, and cinnamon in a small bowl. Cut in the cold butter until the mixture resembles coarse crumbs.
- Sprinkle streusel evenly over the cake batter.
- Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
