Apple Streusel Cake

A moist and tender apple cake topped with a sweet, buttery streusel topping, perfect for fall or any time you crave a comforting dessert.

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream or plain yogurt
  • 2 cups peeled and chopped apples (such as Granny Smith or Honeycrisp)
  • 1/2 tsp ground cinnamon
  • 1 tbsp lemon juice
  • For Streusel Topping:
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 cup unsalted butter, cold and cut into cubes

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round or square cake pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla extract.
  4. Mix in sour cream (or yogurt) until well combined.
  5. Gradually add dry ingredients to the wet mixture, mixing until just combined.
  6. Toss chopped apples with cinnamon and lemon juice, then fold into the batter.
  7. Pour batter into the prepared pan and smooth the top.
  8. To make streusel, mix flour, brown sugar, and cinnamon in a small bowl. Cut in the cold butter until the mixture resembles coarse crumbs.
  9. Sprinkle streusel evenly over the cake batter.
  10. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  11. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Best served slightly warm with a scoop of vanilla ice cream or a dollop of whipped cream.
  • Can be stored at room temperature for up to 3 days or refrigerated for longer shelf life.
  • Use tart apples for the best flavor contrast.
