Apple Pie

- 2 1/2 cups all-purpose flour
- 1 tsp salt
- 1 tbsp sugar
- 1 cup unsalted butter, chilled and cut into small cubes
- 6–8 tbsp ice water
- 6–7 cups sliced and peeled apples (Granny Smith, Honeycrisp, or mix)
- 3/4 cup sugar
- 1/4 cup brown sugar
- 2 tbsp all-purpose flour
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 tbsp lemon juice
- 1 egg (for egg wash)
- 1 tbsp milk (for egg wash)
- Preheat the oven to 425°F (220°C).
- In a large bowl, mix flour, salt, and sugar. Add butter and mix until the mixture resembles coarse crumbs.
- Gradually add ice water, mixing until dough comes together. Divide in half, shape into disks, wrap in plastic, and refrigerate for at least 1 hour.
- In another bowl, combine sliced apples, sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice. Set aside.
- Roll out one disk of dough and fit into a 9-inch pie dish. Trim edges.
- Fill with apple mixture and spread evenly.
- Roll out the second dough disk and place over filling. Trim, seal edges, and cut slits for steam. Alternatively, create a lattice crust.
- Whisk egg and milk for egg wash. Brush over crust.
- Bake for 45-55 minutes or until crust is golden and filling is bubbling. If the crust browns too quickly, cover edges with foil.
- Let cool for at least 2 hours before serving.
Notes
- Use a mix of tart and sweet apples for depth of flavor.
- Chill the dough thoroughly to ensure a flaky crust.
- Place a baking sheet under the pie to catch any drips.
