Apple Cinnamon Coffee Cake

A moist and tender coffee cake infused with warm cinnamon and chunks of fresh apple, perfect for breakfast or dessert.

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • 2 cups peeled and chopped apples (about 2 medium apples)
  • 1/2 cup brown sugar
  • 1/2 tsp ground cinnamon (for topping)
  • 1/4 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In a large mixing bowl, cream the butter and sugar together until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Gradually add the flour mixture to the butter mixture, alternating with the sour cream. Mix until just combined.
  6. Fold in the chopped apples.
  7. Spread the batter evenly into the prepared baking dish.
  8. In a small bowl, mix brown sugar, cinnamon, and chopped nuts (if using). Sprinkle over the top of the batter.
  9. Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let cool in the pan for 15 minutes before serving.

Notes

  • Use tart apples like Granny Smith for a balanced flavor.
  • The cake can be stored in an airtight container at room temperature for up to 3 days.
  • You can drizzle with a simple glaze made of powdered sugar and milk for added sweetness.
