 - 1 tbsp poppy seeds
 - 1/2 tsp baking soda
 - 1/4 tsp salt
 
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
 - In a large bowl, cream together the butter and sugar until light and fluffy.
 - Add the egg, lemon juice, lemon zest, and vanilla extract, and beat until well combined.
 - In a separate bowl, whisk together the flour, poppy seeds, baking soda, and salt.
 - Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
 - Scoop tablespoon-sized portions of dough and place them on the prepared baking sheets, spacing them about 2 inches apart.
 - Bake for 10-12 minutes, or until the edges are lightly golden.
 - Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
